Meal Planning: Call for Recipes!

The last few weeks I have been in a cooking funk at work. I feel like I make the same meals every week. I do enjoy cooking and I have found it's the best way for me to work on my picky eating while providing healthy meals for H. I want to start meal planning so I am not at the grocery store multiple times a week scrambling to make something last minute!

I am hoping my lovely readers will share favorite family friendly recipes (entrees and sides)! I get overwhelmed going through the recipes on Pinterest. Too many options! I am specifically looking for recipes that are kid friendly and relatively easy to make/not super time consuming. Bonus points if I will have leftovers to freeze or use for lunch the next day.

Some of the recipes/picks in my current dinner rotation:
Reddy or Knot lasagna bites
Chicken Parmesan
This chicken, green beans, potato idea from Pinterest
Quesadillas or tacos
And of course Trader Joe's favorites: spinach ravioli, meatballs, spinach pizza

  1. One of my favorite go to quick recipes that is definitly kid friendly is Bisquick pot pie. What is great about it is you can add whatever veggies you have lying around the house. It is quick and easy to prepare and delicious.

  2. I will make spaghetti with peas and Trader Joe's turkey meat balls and everyone eats it! We also eat grilled cheese and tomato soup (also from TJ's) with grapes a lot. It's Avery's favorite meal b/c it is just like what she gets at Nordstrom Cafe. I can sneak carrots and celery into the tomato soup too. I found some easy and healthy ones on Pinterest!

  3. Easiest Recipe Ever, and a New England classic: American Chop Suey

    Elbow Macaroni
    Ground Beef (or Turkey)
    1 or 2 cans of Campbells Tomato Soup (do not add water!)

    Cook everything up separately and mix together! Quick and easy, and ideal for leftovers. You can also add sauted peppers & onions, and some red pepper flakes for a kick!

  4. A dear friend (and fellow blogger buddy) and I were just talking about this. We challenged each other to try more new recipes with our families. She took it a step farther and vowed to not repeat a meal for an entire meal (not counting leftovers).

  5. we may jambalaya, red beans & rice, frittatas are always a big hit because we use up veggies and it cooks in like 15 minutes...

    Any sort of pasta is good with a little cheese and veggies and protein. :)

    Pulled pork with an awesome rub that makes it so flavorful and moist! Wins all around. Anything you can set and forget is a winner. If you get a big enough piece of meat you can use it for the week!

    I love corn as a veggie side. A fun flavored butter kicks it up a notch (even a frozen bag of one).
